▬▬▬▬▬▬▬ STEAMED BARRACUDA LISA- FISH RECIPE ▬▬▬▬▬▬▬
Ingredients
→ 1 1/2 pounds barracuda fillets (or ANY species with firm white meat)
→ 1 carrot, thinly sliced
→ 1 onion, thinly sliced
→ 1 stalk celery, thinly sliced
→ 3 1/2 tablespoons butter
→ Salt & Pepper
→ 2 teaspoons minced parsley
→ 3/4 cup chicken stock
→ 1/4 cup dry white wine
→ 1 1/2 tablespoons flour
Cook veggies in 2 tablespoons of the butter in a large frying pan until soft but not brown. Lay Fillets on top of the vegetables. Add salt & pepper, parsley, stock and wine. Cover and simmer until the fish flakes, about 8 to 10 minutes. Remove the fish to a heated serving dish. Turn heat up to reduce liquid a little. Mix 1 1/2 tablespoons cold butter and four with your fingers. Drop by little chunks in the liquid. Stir constantly to thicken the sauce. Ladle sauce and vegetables over the cooked fillets and serve immediately.
